How to Make Chicken Cacciatore

Chicken cacciatore is a simple Italian main course served with vegetables of choice after the pasta course.

Ingredients

1 chicken chopped into 8 - 10 pieces flour 3 peppers chopped into pieces and white interior removed (mixed colours are nice)

  1. garlic to taste
  2. onion
  3. either chopped fried eggplant or mushrooms (optional)
  4. 6 medium tomatoes, chopped
  5. bay leaf
  6. olive oil (or substitute, e.g. sunflower oil)
  7. seasoning

Steps

  1. Flour the chicken pieces, adding salt to taste.
  2. Brown in olive oil and cook through in an oven-ready pan.Add chopped peppers and onions and cook in oil until soft.
  3. Add all the other ingredients plus half a cup of water. If you are using mushrooms they should be added at the end.
  4. Cook for about 3/4 hour in a medium oven, adding more water if necessary so that the stew does not get dry.
  5. Check seasoning and serve.

Tips

  • In many parts of Italy red peppers would be used rather than black, and they are much healthier, but many people don't like them in any quantity.
  • Use chicken stock or white wine instead of water if you have it, but it is not essential.
  • You may prefer to cook this on the stove instead of the oven, but if you do, make sure the fire is very low once it has all come to the boil.
